    Shallot and Green Peppercorn Butter

     
    • Serves 4
    • Preparation time 10 minutes
  • Ingredients
     
    • 6g green peppercorns
    • 100g salted butter at room temperature
    • 25g shallots, finely chopped
    • 30cm square of clingfilm
  • Method
     
    1. Lightly crush the peppercorns using a mortar and pestle
    2. Soften the butter with a dinner fork or a wooden spoon in a bowl
    3. Add the shallots and peppercorns and shallots
    4. Mix well
    5. Place butter onto cling film and form the butter into a log shape
    6. Roll the film around the butter so it forms a tight log
    7. Fold or twist the ends and place in the refrigerator until firm
    8. Cut into 4 rounds and serve on top of your cooked steak where they melt into the meat to make a simple yet delicious sauce
