• Ingredients
     
    • Slaw

      350g red cabbage, shredded
    • 100g cucumber, thinly sliced
    • 100g carrots, shredded
    • 150g red pepper, thinly sliced
    • 50g spring onion, thinly sliced
    • salt & pepper
    • fresh coriander leaves to garnish

      Honey & Lime Dressing

      2 tbsp olive oil
    • 1 tbsp honey
    • 50ml lime juice
    • 1 clove garlic, crushed
    • ½ teaspoon ground cumin
    • ½ teaspoon smoked paprika
    • salt & pepper to season
  • Method
     
    1. Whisk together all the dressing ingredients in the bottom of a large salad bowl
    2. Add all slaw ingredients to the bowl, season with salt and pepper to taste and toss well to combine
    3. Garnish with freshly picked and chopped coriander leaves
