Being situated less than 30 miles from the UK’s busiest fishing port gives us first pick of the prime wild fish from our fishmonger, Andrew Charles. He’s an ‘MSC’ registered merchant, which means that he sources his fish in accordance with the guidelines laid down by the Marine Stewardship Council - so you know that he treats fish stocks with the greatest respect. Besides Andrew, we work with a select few other noted suppliers.

Our sustainable salmon is from closely monitored farms off Scotland’s northwest coast. The strong tidal currents make for healthy, firm fleshed fish with fantastic natural flavour. Our wild langoustines are traditionally creel-caught around the coastline of Scotland, and are legendary the world over for their fantastically sweet flavour. When it comes to cooking our fish, the first thing you notice is the firm, meaty texture, then the delicately clean, sweet flavour. That’s how you know it literally couldn’t be fresher unless you’d fished it yourself.
