Preheat oven to 160 C / Fan 140 C / Gas 3. Bring meat to room temperature, pat dry and coat lightly in seasoned flour. Heat 1tbsp oil in a flameproof casserole dish and brown the meat on all sides. Add 350ml beef stock and bring to the boil. Place in oven for 2-2½ hours, checking every 30 minutes and topping up stock or water if required. Remove from oven, lift out the olives and reduce the gravy to thicken.
