A delightfully indulgent centrepiece for your Christmas dinner. Grass-fed British beef, expertly matured for at least 35 days in Aberdeenshire and stuffed with béarnaise butter. During cooking this will melt, infusing the beef with an added layer of rich flavour.
Preheat the oven to 250°C / fan 230°C / gas 9 and sear the meat for 15 minutes in the oven. After searing reduce oven temperature to 180°C / fan 160°C / gas 4 and cook for:
Rare-medium rare: 22 -27 minutes, internal temperature 47°C
Medium: 32-37 minutes, internal temperature 55°C
Well done: 45-48 minutes, internal temperature 67°C
Remove from oven and leave to rest for at least 30 minutes in a warm place.
Do not reheat once cooked.
