    Avocado Salsa Verde

    • Serves 4
    • Preparation time 10 mins
  • Ingredients
    • 5g fresh mint
    • 5g fresh parsley
    • 15g capers
    • 5g anchovy fillets
    • 40ml rapeseed oil
    • 1 large avocado
    • Juice of ½ a lemon
    • ½ tsp red chilli flakes
    • Fine sea salt and cracked black pepper
  • Method
    1. Finely chop the mint, parsley, capers, and anchovies
    2. Place into a small bowl
    3. Add the rapeseed oil and mix well
    4. Cut the avocado in half, remove the stone, scoop out the flesh and place into a second small bowl, mix in the lemon juice and chilli seeds, season with a little salt and black pepper
    5. Mix the avocado with the chopped herb mixture and serve with your steaks
