Enjoy the distinctive richness of Scottish venison, caught wild in the highlands of Scotland and traditionally prepared for a delicious centrepiece. An excellent choice for an alternative roast dinner.

Cooking Instructions:
 
Cooking guidelines from defrosted: remove from packaging and pat dry with kitchen paper. Allow the meat to come to room temperature for at least 15 minutes before cooking.

Preheat oven to 200°C fan / gas 7.

Heat a pan on a medium high temperature, add a little oil or brush directly on to the meat. Sear the meat on all sides for 4-5 minutes.

Place the rack in a roasting tin and cook in the centre of the oven uncovered

14-15 minutes for medium
20-22 minutes for well done.

Remove the rack and allow to rest in warm place for 15 minutes before serving.
