We've taken our own grass-fed beef brisket, cured and cooked it in the traditional way until soft and moreish. Try sliced thin and piled high with mustard and pickles in sourdough bread.

To Serve Cold
Defrost overnight in the fridge. Slice thinly and serve as cold cuts.
Or for a New York deli-style sandwich, pile onto rye bread, with Dijon mustard and sliced dill pickle.
To Serve Hot
Defrost overnight in the fridge, put the defrosted meat in a casserole dish, along with juices from the bag to keep it moist, cover and heat in the oven at 160°C / Fan 150°C / Gas 3 for 30-35 minutes.
Or slice and sparingly layer the slices in deep baking tray, heat in the same way as for the whole Salt Beef, but for 10-15 minutes until heated through.
