Oxtail heaven on a plate...........

PLEASE dont stop doing oxtail, it is the most delicious and tender meat ever and the DR oxtail is exceptional. I slow roast in the oven after having boiled and browned the pieces individually. In winter I make oxtail soup/stew with all the goodness of veg/barley and oxtails............in the summer I still slow cook them but use red wine and stock along with carrots, onions. I then cut potatoes into quarters briefly fry them and then pop them in to the gorgeous gravy to absorb all the goodness. Delicious...............xxxxxxxxx

We've just had the oxtail stew I made yesterday. I used a large Cuisinart slow cooker for about 6 hours (1 hour High; 5 on Low). Oxtail slices browned in beef fat and then put in the slow-cooker covered by hot red wine & beef stock with onion, garlic and carrot and a bouquet garni. Like many stews it's even better re-heated and it was delicious: succulent very tender meat falling off the bones loaded with beefy flavours. Not just very tasty but economical too, though meaty, I don't think the pack would serve six, probably more like four.

What a real treat this proved to be. Have never eaten ox cheeks before let alone cooked them. I followed your recipe with a couple of minor tweaks. What a revelation! A truly delicious and flavourful winter supper which was even nicer the following day.
