This convenient selection includes three exquisite varieties: Ceps, aka 'the wild mushroom par excellence'; Chanterelles, with their golden yellow colour and their almost floral fragrance; and Morels, with their honeycombed form and rich, earthy taste.
For best results, cook from frozen.
Cook for 2-3 minutes - either by sautéing in butter, or by adding straight into your finished sauce, ensuring cooked through before serving.
If defrosting them, conserve the defrosting juices to add to your sauce, simmering to reduce.
Take care not to overcook your Ceps.
Like all mushrooms, they are composed mostly of water and can go slimy if allowed to steam or boil.
Chantrelles can have a slight bitter edge to their flavour - this is a natural feature of this mushroom.
We suggest cooking them with another naturally sweet ingredient to balance this subtle hint of bitterness.
