Loin is the premium cut of cod. They're cut by hand from the thick centre of the fillet to ensure excellent quality in every portion. It has a firm texture and a sweet, delicate flavour which will pair with many different flavours from orange to garlic.

 

Cooking Instructions:
 
Cooking guidelines from defrosted: pan to oven.

Preheat oven to 200°C/ f an 180°C/ gas 6. Remove all packaging. Drain excess liquid and pat the fillets dry with kitchen paper.

Preheat a non-stick frying pan over a medium heat, add a little oil, when hot place fillets into the pan skinned side down and press lightly into the pan.

Cook gently for 1-2 minutes, then place the pan into the centre of the preheated oven and cook for 6-8 minutes add a knob of butter to the hot pan, when melted and hot use to baste the fish whist it cooks.

When cooked remove the fillets onto a warm plate and serve.
