The superb texture and unique depth of flavour of Wagyu beef creates an extraordinary culinary experience. Ours is sourced from Darling Downs in Australia, one of the most prestigious Wagyu suppliers in the world. Bred from a cross of Wagyu and Aberdeen Angus cattle, for fantastic marbling and rich beef flavour, it's grain fed, as is traditional for Wagyu beef, on a family farm. Wagyu is scored on a marbling rating of 1 -9. Ours scores between 3 and 5 on this scale, meaning that's it's heavily marbled, but you still get more meat than fat! Our butchers carefully hand cut each precious fillet, ribeye and sirloin steak. From the offcuts we make a fantastic Wagyu Steak Burger - once tasted, never forgotten!

How-to-cook-the-perfect-steak

Cooking Instructions:
 

Wagyu Fillet Steak (pan-to-oven method)

Remove defrosted meat from vacuum packaging and pat dry with kitchen paper. Allow to ‘bloom’ and come to room temperature for 30 minutes before cooking. This helps it cook more evenly, stay juicier and more tender.

Preheat oven to 180ºC / Fan 160ºC/ Gas 3 and heat a frying pan on the hob till almost smoking. Brush oil onto the meat and place in the pan - it should sizzle. Sear for 4 -5 minutes.

Once seared, place meat uncovered on a rack in a roasting tin. Season with salt and pepper and roast in the oven and cook to your liking following the recommended times.

Rare: 6-7 minutes
Medium-rare: 7-8 minutes
Medium: 8-9 minutes

Remove meat from oven, cover with foil and leave to rest in a warm place for 10 minutes. Resting ensures evenly juicy, tender meat. Use this time to warm plates, prepare veg or make a sauce.


Wagyu Ribeye Steak

Remove defrosted meat from vacuum packaging and pat dry with kitchen paper. Allow to ‘bloom’ and come to room temperature for 20 minutes before cooking. This helps it cook more evenly, stay juicier and more tender.

Heat a frying pan on the hob till almost smoking. Cook the steaks to your liking following the recommended times:

Rare: 1-1½ minutes per side, rest for 7 minutes
Medium-rare: 1½-2 minutes per side, rest for 6 minutes
Medium: 2-2½ minutes per side, rest for 5 minute

Remove from the pan, cover with foil and leave to rest in a warm place for the recommended time.


Wagyu Sirloin Steak

Remove defrosted meat from vacuum packaging and pat dry with kitchen paper. Allow to ‘bloom’ and come to room temperature for 20 minutes before cooking. This helps it cook more evenly, stay juicier and more tender.

Heat a frying pan on the hob till almost smoking. Cook the steaks to your liking following the recommended times:

Rare: 1-1½ minutes per side, rest for 7 minutes
Medium-rare: 1½-2 minutes per side, rest for 6 minutes
Medium: 2-2½ minutes per side, rest for 5 minute

Remove from the pan, cover with foil and leave to rest in a warm place for the recommended time.


Wagyu Burger

From defrosted: About 20 minutes before cooking, remove the burgers from the packaging and allow them to come to room temperature.

Preheat a heavy frying pan, ridged griddle pan, grill or BBQ to a medium-high temperature.

Cook the burgers for 9-11 minutes, turning occasionally. Don't press down while cooking as this can dry them out.

Place the burgers on a rack, cover loosely with foil and leave to rest for 3-5 minutes before serving.

This product must be cooked thoroughly prior to consumption.
