A tender, juicy roast with the rich, full flavours of wild Scottish venison. The lean fillet and loin meat is kept nice and juicy as it cooks beneath a self-basting layer of pork fat.
You don't get meat more 'free-range' than real Scottish venison!
Our deer roam freely across Aberdeenshire and the highlands, and are stalked the traditional way, on foot, helping to keep countryside traditions alive.
Pan to Oven Cooking method: Sear the joint on all sides over a medium heat for 6-8 minutes, then salt the fat and pop into a pre-heated oven at 230 C for:15 minutes for medium 18-20 minutes for well done Rest the meat for 10 minutes prior to carving.
Low Temperature Cooking method: Sear the joint on all sides over a medium heat for 6-8 minutes, then salt the fat and pop into a preheated oven at just 80 C for 75-90 minutes. There is no need to rest the meat using this method.Serving Carve thickly across the grain into neat circular slices 1cm or more thick, to enjoy this roast at its best. Season to taste with salt and pepper and serve with caramelised root vegetables and garlic mashed potatoes.
