Traditional Porchetta Roast
A traditional Italian hog roast

Delicious pork belly hand-rolled with fragrant fennel seeds, marjoram, thyme, rosemary, basil; a little garlic, salt and cracked black pepper. An award-winning Italian treat.
Preheat the oven to 180°C / Fan 160°C / Gas 4.
Place your roast on a wire rack in a roasting tray.
Drizzle your roast with olive oil and season with sea salt and freshly ground black pepper.
Add some water to the bottom of the tray to prevent smoking. Roast the meat in the oven for
150 minutes from frozen
120 minutes from defrosted
Then increase the temperature to 250°C / Fan 230°C / Gas 9 and crisp the roast for 20-30 minutes.
Turn and baste occasionally whilst cooking. If your roast starts to colour too much, cover loosely with tinfoil.
Once your joint is cooked, rest uncovered in a warm place for at least 20-30 minutes.
