Slow Cooked Jacob's Ladder

Otherwise known as the short ribs of beef, we cut the Jacob's Ladder from where the tasty, well-marbled ribs run into the lower end of the shoulder.
Leave the product for 20 minutes at room temperature in its bag prior to roasting. Remove all packaging and place bone side down, with all fat and liquid onto a baking tray.
Cook in a preheated oven at 200°C / Fan 190°C / Gas 6 for:
From defrosted: 40-45 minutes
From frozen: 50-55 minutes
1.8kg & 2.16kg
From defrosted: 65-70 minutes
From frozen: 90-55 minutes
Remove from the oven and allow to rest for 5 minutes. Ensure the product is piping hot throughout. Do not reheat once cooked.
Please Note: Once cooked, the pan juices will be concentrated and highly flavoured. To use as a gravy, dilute to taste with water, light stock or wine.
