A substantial cross-section cut from the whole saddle, includes tender loin and fillet meat, complete with bone and fat for extra flavour. Matured for up to 10 days for flavour, from grass-fed Scotch lamb.
Our lamb is matured for a minimum of 10 days, depending on the season. Our butchers use their skill and experience to ensure it has just the right length of maturation. This makes a big difference to the tenderness, flavour and succulence.
Cooking guidelines from defrosted:
Defrost in fridge overnight.
Remove meat from packaging and allow to come to room temperature.
Preheat a large frying pan. Brush oil directly onto the sliced and season with salt and pepper.
Cook on a medium heat for 4-5 minutes on each side.
Remove from the pan, place on a rack, cover with foil and allow to rest for 5 minutes before serving.
