Our deer roam freely across Aberdeenshire and the highlands, and are stalked the traditional way, on foot, helping to keep countryside traditions alive.
Defrost meat thoroughly before cooking. Remove the meat from packaging and pat dry with kitchen paper.
Allow the meat to come to room temperature for even cooking. Preheat the pan on a high temperature, add a little oilve oil or alternatively brush the oil directly onto the meat.
Place in the pan carefully and cook on each side for 2-2½ minutes medium or 3-4 minutes well done.
Once cooked let the meat rest in a warm place for 4 minutes before serving.
