Head Butcher's Tip:

The circle of fat between the fillet of ribeye and the ribeye cap should be around the size of a 50 pence piece, for the ultimate flavour. Sometimes there can be a trace of gristle left around this circle of fat, this is entirely normal and is a natural part of this steak.
