Our delicious red deer loin is a fabulous piece of boneless meat that is so easy to cook. Slices into delicious rounds of meat that are superbly juicy.
Defrost before cooking. Remove fillet from packaging and pat dry with kitchen paper, allow to come to room temperature for at least 15 mintues before cooking. Preheat oven (with fan off) to 80 C and place roasting tray in oven to heat up. Heat a frying pan on a high temperature, add a little oil or brush directly onthe meat and sear the meat for 3 minutes on all sides to brown. Season the meat with salt and pepper, transfer to roasting tray. Cook in the oven for 45-60 minutes.
