Wild Scottish red deer, traditionally prepared for the finest flavour. Slices into delicious rounds of meat that are superbly juicy.
Defrost before cooking.
Pat dry the fillet using kitchen paper, brush with a little olive oil, sear in a hot pan on all sides for 2-3mins.
Then place into a preheated oven at 200°C/Fan 190°C/Gas 6 for 8-10 mins.
Rest for a further 10 minutes in a warm place.
Whilst we take every care to remove it, our traditionally prepared game products may contain some shot.
