Our wild red deer rack brings you layer upon layer of delicious flavour. The perfect roast centrepiece to crown a meal, offering finely textured intense game flavours.
Defrost the rack, remove from packaging and pat dry with kitchen paper. Allow the meat to bloom by allowing 15 minutes for it to come to room temperature.
Preheat oven to 200°C / 400°F / Gas 6. Heat a pan on a high temperature, add a little oil or brush directly on to the meat. Sear the meat on all sides for 4-5 minutes.
Place the rack in a roasting tin and place in the oven uncovered, cook for 12-14 minutes for medium, and 16-18 minutes for well done.
Remove the rack and allow to rest in warm place for 10 minutes before serving.
