This striking starter is sustainably fished in Scottish waters and best served with pea purée or a drizzle of herb-infused oil.
Preheat grill to high temperature. Rinse under cold water and gently slide a knife under the scallop meat to remove the scallops from their shells.
Pat both shell and scallop with kitchen paper. Drizzle a little oil into the shells and dot with garlic butter over the scallops and cook under the grill for 2-3 minutes.
These scallops can also be cooked in oven at 250°C / Fan 230°C / Gas 8 for 3-4 minutes.
