Slow cook our beautiful shanks for intensely porky meat chunks that are filled with flavour. Very little preparation required then leave it in the oven to become wonderfully tender.
Remove defrosted meat from its packaging, pat dry with kitchen paper and allow the meat to come to room temperature for up to 15 minutes before cooking.
Place the shanks in an ovenproof roasting tin and rub with a little salt all over, add some water to the bottom of the tin and roast in a preheated oven at 160°C / 325°F / Gas 3 for 80 - 95 minutes.
Remove from the oven and cover loosely with foil. Leave to rest for 10 minutes before serving.
