Pork with extra flavour from cooking on the bone. Braise these humble cuts slowly for the maximum tenderness.
Remove defrosted meat from its packaging, pat dry with kitchen paper and allow the meat to come to room temperature for up to 15 minutes before cooking.
Place the shanks in an ovenproof roasting tin and rub with a little salt all over, add some water to the bottom of the tin and roast in a preheated oven at 160°C / fan 140°C / gas 3 for 80 - 95 minutes.
Remove from the oven and cover loosely with foil.
Leave to rest for 10 minutes before serving.
Preheat the oven to 160°C / fan 140°C / gas 3.
Season the meat on all sides with salt and pepper and coat with plain flour.
Heat a little oil in a flameproof casserole dish, add the meat and sear on all sides until coloured, then remove and set aside.
Add diced onion, carrot, celery and leeks and sauté until lightly coloured (about one third of the meat weight gives you the weight of vegetables required).
Return the meat to the pan, then add the wine and stock.
Making sure that the liquid covers at least a third to a half of the meat.
Place into the oven and cook for 75-90 minutes until the meat begins to move easily away from the bone.
Remove the meat and reduce the liquid until slightly thickened.
Serve with basmati rice, creamy mashed potatoes or big hunks of crusty bread.
