Minted Lamb Loin Mini Steaks

The classic lamb and mint: tender lamb loin, infused with a marinade of sweet, fresh mint, olive oil and a little black pepper.
About 20 minutes before cooking, remove the mini steaks from the packaging and allow them to come to room temperature.
Preheat a heavy frying pan, ridged griddle pan, grill or BBQ to a medium temperature.
Roll the mini steaks in the marinade to coat.
Cook for 6-6½minutes, turning frequently.
Don't press down while cooking as this can dry them out.
Place the mini steaks on a rack, cover loosely with foil and leave to rest for 3-5 minutes before serving.
