Price per kg:
- 2 Lean Lamb Racks, (individually packed) 400g each
- 2 Lean Lamb Loins, (individually packed) 180g each
Complete with recipes for Lamb Racks in a delicate garlic and herb crust, and marinated Lamb Loins, low temperature cooked to tender pink perfection.
Preheat the oven to 210°C. Brush the racks with oil. Sear in a hot pan for 4 minutes until browned on all sides, and season with salt and pepper.
Place on a wire rack inside a roasting tray and cook for 15-16 minutes, until the meat’s internal temperature reaches 45-47°C for a medium finish.
Remove from the oven and rest somewhere warm for at least 10 minutes. The internal temperature will continue to rise during this time to 60- 65°C.
Preheat a griddle or frying pan to the to the highest setting and brush the loin with oil all over. Place the loin into the pan and cook for:
Medium: 2½-3 minutes per side
Well Done: 4-4 ½ minutes per side Turning the loin only once.
Remove the loin from the pan and place on a rack. Cover loosely with foil and leave to rest for 10 minutes before serving.
