Lamb rack may be the finest cut of lamb. Expertly hand trimmed by our Butchers, it looks as impressive as it tastes. We've selected the best chef-prepared sides to go with it so you can have a full, premium roast lamb dinner with no hassle.

 

Cooking Instructions:
 
French Trimmed Lamb Rack
Remove from its packaging, allow the meat to come to room temperature for 20 minutes, patting dry with kitchen paper.
Preheat oven to 250°C / Fan 230°C / Gas 9 and a frying or griddle pan. Once hot, add a little oil to the pan. Sear the meat for 4-5 minutes.
Place your meat uncovered on a rack in a roasting tin, and put into the preheated oven.
Cook to your liking following the recommended times.

Medium: 10-12 minutes
Well Done: 14-16 minutes

Remove from the pan, cover with foil and leave to rest in a warm place for 10 minutes.
Buttery Mashed Potato
Microwave: Based on 800 Watt. Pierce the film lid and cook until piping hot

From frozen: 4-5 minutes
From defrosted: 3-4 minutes 

Stir the melted butter carefully through the potatoes before serving.

Oven: pierce film and place tray onto a baking tray. Cook in a preheated oven at 200°C / fan 190°C / gas 5 until piping hot

From frozen: 25-30 minutes
From defrosted: 15-20 minutes 

Stir the melted butter carefully through the potatoes before serving.
Caramelised Carrots
For best results cook from frozen in the oven.

Oven: Remove film and place tray onto a baking tray. Cook in preheated oven at 210°C / Fan 200°C / Gas 7 until piping hot for:

From frozen: 30-35 minutes
From defrosted: 22-25 minutes

Remove from oven and allow to stand for 5 minutes before serving.

Microwave: Based on 800 watt. Pierce film and cook until piping hot:

From frozen: 4 - 5 minutes
From defrosted: 3 - 4 minutes

Stir before serving.
Honey Roast Parsnips
For best results cook from frozen in the oven.

Oven: Remove film and place tray onto a baking tray. Cook in preheated oven at 210°C / Fan 200°C / Gas 7 until piping hot for:

From frozen: 30-35 minutes
From defrosted: 22-25 minutes

Stir before serving.
