Succulent medallions of grass-fed British lamb packed full of deliciously distinctive flavour. Expertly produced by our Butchers in Aberdeenshire, these medallions make for a fabulous addition to your dinner table. Sear in a hot pan, marinate and serve with your choice of seasonal vegetables.
Preheat a heavy based frying or griddle pan over a medium- high heat, until just smoking, get it hot for the initial sear.
Brush each side of the medallion with a little oil & season lightly just before cooking.Cook to your liking following the recommended timings.
Medium: 4-4½ minutes, turning occasionally and searing all over, rest for 3 minutes
Well done: 6-6½ minutes, turning occasionally and searing all over, rest for 2 minutes
Remove from the pan and rest somewhere warm for the recommended times.
