There is so much oil in a fresh herring it is quite possible to dry fry the herring without any additional fat being added to a hot non-stick frying pan.
Fry for 3-4 minutes each side taking care not to burn.
Add a very small amount of fat to a frying pan and bring to temperature.
Add the herring fillet t othe pan and fry for 3-4 minutes each side.
