Guinea fowl need not feel exotic and out of your reach. It cooks as easily as chicken yet with a deliciously strong flavour and a meaty punch.
Defrost thoroughly before cooking. Remove from packaging the pat with kitchen paper. Allow to come to room temperature as this allows the meat to cook evenly. Preheat the oven to 200 C / 400 F / Gas 6. Heat a frying/griddle pan, add a little olive oil or brush the oil directly onto the meat. Place carefully in the pan and cook on all side for 2-3 minutes. Transfer the meat to a roasting dish and cook in the oven uncovered for 12-14 minutes. Once cooked rest in a warm place for 10 minutes before serving.
