Chefs know that the legs are the tastiest part of the chicken. These are juicy and succulent with seriously rich flavour.
Our Loué birds are rustic, slow growing breeds. Their longer lifespan and their life in idyllic free-range conditions, with lots of space to roam around wooded pastures allows their meat to develop an unmistakably deep, rich flavour.
Remove the chicken from the packaging an pat dry with kitchen paper. Preheat the oven to 200°C / fan 180°C / gas 6.
Place the legs in a roasting tray. Drizzle with olive oil and season with salt and pepper.
Sear meat for 15 minutes in the oven.
Reduce oven temperature to 180°C / Fan 160°C / gas 4 and continue cooking for 30-40 minutes.
Remove from oven, leave to rest for at least 10 minutes in a warm place.
After resting serve on hot plates.
Ensure product is piping hot throughout.
Do not reheat once cooked.
