You can't go wrong with a classic pork chop. We've dry aged these ones for a full 21 days to ensure they have the absolute best possible flavour and texture. The full fat and rind keps them exceptionally juicy.
Allow the meat to come to room temperature, approx 20 minutes.
Preheat a griddle or frying pan on a medium - high setting. Brush the meat lightly with oil.
Place into the pan and cook for 11-12 minutes, turning occasionally.
Finish by searing the rind side in the hot fat, to crisp a little.
Remove the meat from the pan, keep warm and leave to rest for 1-3 minutes before serving.
