The whole breast and meaty wing-tip. The chickens' corn-fed diet means the meat has a golden tint and deep, natural flavour.
Marinate some breast fillets, mini, fillets, supremes or drumsticks in a mixture of harissa, smoked paprika and olive oil, and oven bake for a spicy treat.
Defrost the chicken throughly before cooking. Bring the meat to room temperature for 15 minutes prior to cooking.
Remove the chicken from the packaging and pat dry with kitchen paper. Preheat the oven to 200°C / Fan 180°C / Gas 6.
Heat a frying or griddle pan to a high temperature and add a little olive oil, alternatively brush oil directly onto chicken. Sear the chicken on all sides for 2-3 minutes per side.
Transfer the chicken to a roasting tin and cook uncovered in the oven for 12-14 minutes.
Leave the meat to rest in a warm place for 10 minutes.
