If you're looking for an impressive and flavourful main course for a special occasion, look no further than our take on the official Coronation recipe: Asian-style Lamb Racks, handmade by our expert Butchers to commemorate the Coronation of HM King Charles. This delicious fusion of flavours features tender British lamb racks, expertly French-trimmed and coated with a rich, Asian-style marinade with a hint of Dijon Mustard, ready to infuse as it defrosts. But what about the sides? To complement the savoury and salty flavours of the marinated lamb, we've put together three Asian-inspired side dishes that will take your meal to the next level.
First up, five-spice roasted vegetables. To add an Asian twist to your roasted vegetables, simply sprinkle them with five-spice powder. Preheat your oven to 200°C, cut your choice of vegetables (such as carrots, sweet potatoes, and red onions) into similar sizes and toss them with olive oil and a pinch of salt. Then sprinkle a teaspoon of five-spice powder over the vegetables and toss to coat evenly. Roast in the oven for 25-30 minutes, or until they're tender and roasted. The five-spice powder will add a unique and savoury flavour to the vegetables that complements the marinated lamb racks.
Next, Asian-style Baby Potatoes. Once your potatoes are washed and ready, and all around the same size, place them into a large bowl with some sunflower oil, sesame oil, soy sauce, black pepper, and crushed garlic cloves. Transfer the potatoes to a baking tray and spread them out before roasting in a 220℃ oven until they’re browned and cooked through. Let them cook slightly and sprinkle with finely sliced spring onion & coriander to serve. This will add a delicious freshness to the rich, Asian flavours of the potatoes and balances the savoury and salty flavours of the marinated lamb racks.
Last but not least, sesame and ginger green beans. To add another layer of Asian flavour to your green beans, simply add grated ginger to the stir-fry. Blanch 500g of trimmed green beans in salted boiling water for 2-3 minutes, then drain and rinse them under cold water. Heat a tablespoon of vegetable oil in a wok or frying pan and add two minced garlic cloves and a tablespoon of grated ginger. Stir-fry for a few seconds, then add the blanched green beans and stir-fry for another one to two minutes. Add a tablespoon of toasted sesame oil, a tablespoon of sesame seeds, and a pinch of salt, then stir-fry for another 1-2 minutes until the green beans are coated with the sesame mixture. The addition of ginger adds a spicy and fragrant note to the dish that complements the marinated lamb racks nicely.
Of course, no meal is complete without a perfectly picked drinks pairing, so here are three options to go with your meal.
For wine lovers, we suggest a bottle of Pinot Noir. This light to medium-bodied red wine is known for its fruity and earthy notes, making it the perfect match for the rich and complex flavours of the lamb racks. Its acidity also helps to cut through the richness of the meat, making each bite even more enjoyable.
IF you prefer a good beer, try a crisp and refreshing Asian lager. This type of beer is often light and easy to drink, with subtle hop flavours and a clean finish. It pairs well with the boldness of the lamb racks and complements the Asian-inspired side dishes.
For something a little more unusual, try a lychee martini. The sweet and floral notes of the lychee juice in the cocktail will balance out the savoury and salty flavours of the lamb, while the vodka provides a smooth and refreshing finish. It's a unique and unexpected pairing that will add a touch of elegance to your meal.
So there you have it - a delicious and impressive meal that celebrates the best of British with an Asian twist. These three side dishes, paired with the marinated lamb racks, will tantalise your taste buds and impress your guests. Enjoy!
