• Ingredients
     
    • 240g Heinz tomato ketchup
    • 60g brown sugar
    • 3 tablespoons English mustard
    • 2 tablespoons lemon juice
    • 1 tablespoon cider vinegar
    • 1 tablespoon Worcestershire sauce
    • 2 teaspoons Smoked Paprika
    • ½ teaspoon cracked black pepper
    • 2 garlic cloves crushed
    • 1 Large Onion Finley Diced
    • 1 Red Pepper Finley Diced
    • 1 Yellow Pepper Finley Diced
    • 1 Orange Pepper Finley Diced
    • 100 ml of good beef stock
    • Smoked Salt, to taste
  • Method
     
    1. Sauté the onion, peppers, garlic and smoked paprika in a little oil until softening slightly and the paprika has cooked out, then set aside.
    2. Combine all the other ingredients and add to a saucepan. Bring to a slow boil and immediately lower heat. Simmer, uncovered, for about 30 minutes, stirring occasionally 5 minutes before the end of the cook add the peppers, onion and garlic mixture. Store leftover sauce in a covered container in the refrigerator.
