Hand selected from trusted farms in the north of Scotland, this succulent grass-fed Scotch beef is expertly aged for 35 days to bring out the best of the flavour, then cut by hand in our Aberdeenshire butchery.
Savour the luxurious tenderness of Scotch beef fillet. With creamy flecks of marbling throughout, it has a richness which is rarely found in fillet steak. An excellent way to bring a taste of luxury to your table.

Cooking Instructions:
Cooking guidelines from defrosted: carefully remove the steak from its packaging, pat dry with kitchen paper. Allow the meat to come to room temperature for 20 minutes.

Heat a little oil in a heavy based frying pan, over a high heat. Season to taste with salt & pepper just before cooking. Cook the steaks to your liking following the recommended times.

Rare-medium rare 3-3½ minutes per side, rest for 6 minutes

Medium: 4-4½ minutes per side, rest for 4 minutes
(Reduce pan temperature to medium - high heat after the initial sear)

Well done: 5½-6 minutes per side, rest for 2-3 minute
(Reduce pan temperature to medium-high heat after the initial sear)

Remove from the pan and leave to rest in a warm place for the recommended time.
