Storage Conditions: Store at < -18ºC (Supplied frozen) Recommended Shelf Life once defrosted: Store between 0 - 5ºC - Use within 24 hours
Rinse the defrosted Lemon sole under cold running water then pat dry with kitchen paper.
Turn the Lemon Sole in sufficient flour to coat, tapping off any excess, set aside.
Heat some oil in a large frying pan, and cook the thinner side of the fish first over a medium heat for 2 minutes.
Turn the fish using a large spatula and cook for a further 2-3 minutes. Season with salt and pepper. Remove the fish from the pan and place carefully onto a preheated serving dish.
Pour the pan juices over the fish and sprinkle with parsley, serve immediately.

To serve: Run a knife down the bone from the centre to the outer and gently ease the upper fillets away to both sides. Take hold of the tail, lift it up and carefully 'unzip' the fish. The bone will come away cleanly and the fillets below will fall back onto the plate.
