Freezer Shelf life: 24 months from production
Shelf life once defrosted: 48 hours
Pan to Oven Cooking method: Sear the joint on all sides over a medium heat for 6-8 minutes, then salt the fat and pop into a pre-heated oven at 230ºC for:
15 minutes for medium
18-20 minutes for well done
Rest the meat for 10 minutes prior to carving.
Low Temperature Cooking method: Sear the joint on all sides over a medium heat for 6-8 minutes, then salt the fat and pop into a preheated oven at just 80ºC for 75-90 minutes. There is no need to rest the meat using this method.
Serving Carve thickly across the grain into neat circular slices 1cm or more thick, to enjoy this roast at its best. Season to taste with salt and pepper and serve with caramelised root vegetables and garlic mashed potatoes.

||Lovely flavoured venison but not as tender as I expected from the description. Cooking tips implied it would be great only cooking for a short roasting time. Having bought two, I will do long slow cooking instead. I'm sure it will improve the tenderness and also keep the great flavour!|
