In a medium sized cooking pot, add the oil, onion and garlic. Cook on a medium heat until opaque, then add the minced steak. Mix the beef until well browned, stirring often. Add all other ingredients (excluding the marrow), mix well, cover and reduce heat to low before cooking for 5-10 minutes.
Preheat the oven to 180ºC. Peel the marrow (do not cut off the ends), cut in half lengthwise and deseed. Lay the two halves side by side in the centre of a large piece of tin foil - allowing steam space at the top but closed ends.
Fill both halves with the cooked meat, and wrap the marrow in foil before placing into a baking tin in the oven. Cook at 180ºC for 30-45 minutes.
Open up the foil, return to the oven and reduce the heat to 160ºC for 30 minutes, checking with a fork to see if the marrow is cooked. If not, return to the oven and check at regular intervals.
