    The Best Ever Sausage Beans & Chips

  • Ingredients
     
    • 1 can of plain haricot beans in water
    • 4 chopped rashers Smoked Streaky Bacon
    • 1 onion, finely chopped
    • 2 tbsp olive oil
    • 1 clove of garlic, crushed
    • 1 tsp smoked paprika
    • 1 can chopped tomatoes
    • 1½ tbsp molasses or dark brown sugar
    • 2 tbsp apple cider vinegar
    • 2 packs Alpine fries
    • Generous pinch of sea salt
    • Needles from 1-2 sprigs fresh rosemary
    • 4 Pork Sausages
    • 1 onion, sliced into rings
  • Method
     
    1. Drain and rinse the beans.
    2. In a heavy bottomed saucepan, the bacon and onion in the oil until the onion softens. Add the garlic, paprika, chopped tomatoes, molasses and vinegar.
    3. Stir in the beans, and cook uncovered at a low heat for around 30 minutes, stirring regularly to stop them from sticking. The beans should be nestled in an almost syrupy sauce without going mushy.
    4. In the last 15 minutes, cook your sausages and chips. Spread out the Alpine Fries on a baking tray, sprinkle with sea salt and fresh rosemary, and cook in the oven at 200°C as per the instructions on the packaging.
    5. While they’re cooking, fry the sausages with the fresh onion rings, till all is browned and the sausages are cooked through but juicy.
    6. Serve up your sausages, bacon-infused beans, and chips on warmed plates, and relish this simple yet deliciously comforting British 'soul food'.
