Confit Duck Legs

Whole Chicken

Before cooking allow the bird to come to room temperature, season generously with salt and pepper and sear in a hot oven at 230°C / 450°F / Gas 8 for 15 minutes. Reduce the temperature to 180°C / 360°F / Gas 4 and cook for 15-18 minutes per 450g (lb). Once cooked allow to rest for at least 10 minutes before carving.


Chicken Breast Fillets

These chicken breasts are skinless and boneless and can be cooked in many different ways. Enjoy whole, diced in a pie or as part of a stir fry; the meat is of such quality it will enhance the flavour and texture of any meal. If you want something quick and easy - simply pan-fry the fillets in a hot pan for 2-3 minutes per side, then rest for up to 5 minutes before serving.


Stuffed Chicken Thighs

Remove all packaging and place onto a baking tray, lined with baking paper.Cook in a preheated oven at 200°C / Gas 6 for:
30-32 minutes from defrosted
45-47 minutes from frozen
Remove from the oven and allow to rest for 5 minutes before serving. Ensure the product is piping hot throughout. Do not reheat once cooked. All times and temperatures stated are for fan ovens; if using a conventional oven the temperature must be increased by 10-20°C.


Garlic & Herb Chicken Wings

For best results, cook from frozen. Cooking appliances vary in performance, these are guidelines only. Ensure product is piping hot throughout before serving

Confit Duck Legs

PAN FRY: Heat a frying pan over a low heat and sauté the legs, skin side down, with a little of the fat, until the skin is crisp, golden and heated through.
OVEN: Preheat oven to 200°C / Fan 180°C / Gas 6. Lift the duck legs out of the fat wipe off most of the excess with kitchen paper. Place skin-side up on a rack in a roasting tin and roast for 15-20 minutes, until the skin is crisp and golden and the meat has heated through.

Chef's Tip: Keep the remaining duck fat and use later, in small amounts, to make gorgeous sautéed food.
