The perfect roast potatoes and stuffing


Roast Potatoes

  • 1.2 kg Maris Piper potatoes, peeled and halved or quartered
  • Sea salt
  • 100 ml sunflower oil
  • 2 tsp Donald Russell’s The Perfect Seasoning

  • The Ultimate Christmas stuffing with Chestnuts, Bacon and cranberries

  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 20g Donald Russell Smoked Streaky Bacon, diced
  • 100g dried cranberries, soaked in 50ml amaretto for an hour
  • 450g Donald Russell Pork Sausage Meat
  • 140g cooked chestnuts, roughly chopped
  • 2 tbsp fresh parsley, finely chopped

    • Preheat your oven to 180ºC/Fan 170ºC/Gas 4.
    • Sauté the onion, garlic and bacon until softened and cooked.
    • Chop the cranberries and tip all the ingredients, including the leftover amaretto, into a large bowl, mixing well.
    • Press into a greased ovenproof dish and bake in your preheated oven for 40-45 minutes. If you prefer, roll the stuffing into balls and bake in the oven until browned and cooked through.
