Our tender and tempting 10 day matured lamb rack has plenty of rich meat on the bone. Slice between the bones for tender cutlets that everyone will enjoy.
Remove from packaging, pat dry with kitchen paper and allow to come to room temperature for 30 minutes before cooking. Preheat oven to 230°C / 450°F / Gas 8 Sear the meat in a hot pan with a little oil for 4-5 minutes on each side.Transfer meat onto a rack in a roasting tin and place in the oven.Cook in the oven for:
Medium: 10-12 minutes
Well Done: 14-16 minutes
Remove from oven and cover with tin foil and allow to rest in a warm place for 10 minutes before serving.
