Simmer your bones in salted Water for about 15-20 minutes. Drain the bones and roast in a pan in an oven at 230°C / Fan 210°C / Gas 8 for about 35-40 minutes. When you ready to boil your stock remove bones and roasting bit from the tray with a bit water and a spatula and transfer into a high pot (the bones will need some space). Add onion, bay leave, peppercorn and a pinch of salt and fill with cold water. simmer for as long as possible, min. 3-4 hours. Add the last 30 minutes carrots and parsley and finish with a hint of nutmeg. Pass through a siff and a mousslim.
