Cook from defrosted.
About 20 minutes before you start cooking, remove the defrosted chops from the refrigerator and open the packaging. This will allow the chops to come to room temperature.
Pre-heat a heavy frying pan or ridged griddle pan, grill or barbecue to a medium-high temperature. Drizzle the chops with oil. Sear for 3 - 4 minutes per side.
Place on a rack and rest somewhere warm for at least 2 - 3 minutes.
