Smoked Haddock Pie

Grease a medium size oven proof dish with butter and place the spinach in the bottom

Ingredients

4 Smoked Haddock Fillets
600g frozen Leaf Spinach (defrosted)
1 Garlic Clove (chopped)
Salt and Pepper
fresh Nutmeg (grated)
20-30g Butter
500g mashed Potatoes
1 Egg Yolk
2-3 tbsp Double Cream
2 tbsp Parmesan (grated)

Smoked Haddock Pie

Instructions

Preheat the oven to 180ºC/350F/Gas Mark 4. Drain the spinach and press out any excess liquid; mix with garlic and season with salt, pepper & nutmeg.

Grease a medium size oven proof dish with butter and place the spinach in the bottom. Rinse the Haddock Fillets under cold running water and pat dry with kitchen paper and arrange them on top of the spinach. Mix the mashed potatoes with the remaining ingredients and spread out equally on top of the haddock.

Place into the oven and bake for 20-25 minutes.

Serve with seasonal vegetables.
