A whole saddle of lamb is a premium cut with rich, deep flavour, but it can be a little tricky to carve. No more! Our skilled butchers have cut the meat from the bone by hand, and tied it back on. You get all the flavour of roast lamb on the bone, but simply snip the strings to carve neat, even slices – easy!

  Professionally shock frozen
Free delivery on all orders over £80.00
Storage: Store below -18ºC to -25ºC
Defrost: Defrost in a refrigerator for 7-10 hours per 500g
Once defrosted do not re-freeze
Shelf life defrosted: Use within 48 hours
Cooking Guidelines:

Remove all packaging and pat dry with kitchen paper

Allow 30-60 minutes for the meat to come to room temperature

Temperatures & Times:
Pre-heat oven to 250ºC/Fan 230ºC/Gas 9
Place the joint in a roasting tray, season salt and pepper
Sear meat for 15 minutes in the oven
Reduce oven temperature to 190ºC/Fan 170ºC/Gas 5 and cook for:

Medium: 40-50 minutes
Internal temperature of meat: 65-60ºC

Well Done: 55-65 minutes
Internal temperature of meat: 65-70ºC

Resting
Remove from the oven and rest for at least 20 minutes in a warm place

Easy Carving
After resting, snip the strings, lift the meat off the bone.
Slice and serve on hot plates.

This joint was tender and delicious and well appreciated by my four guests who enjoyed their Easter lunch and were very complimentary regarding the roast lamb. The easy carve option was a bonus.
