All the drama and flavour of a traditional rib roast, but much easier to carve - simply cut the string, lift the meat off the bone and slice. This juicy, succulent roast is where we cut our prized ribeye steaks from - the 'eye' of fat runs right through it to give the most spectacularly rich, deep, mellow flavour.

Note: Allow up to 72 hours to defrost

How to cook Easy Carve Roasts, by Donald Russell.

 

-18°C. Once defrosted store between 0 - 5°C. Use within 24 hours
Nutritional; Values: Typical per 100g

Energy: 1117kJ/ 267kcal, Fat: 17.3g of which saturates: 6.81g, Carbohydrates: 0g of which sugars: 0g, Protein: 25.9g, Salt: 0.13g
Remove all packaging and pat dry with kitchen paper. Allow 30-60 minutes for the meat to come to room temperature. Pre-heat oven to 250°C / Fan 230°C / Gas 9. Place joint in a roasting tray, season with salt and pepper. Sear meat for 15 minutes in oven. Reduce temperature to 190°C / Fan 170°C / Gas 5 and cook for:

Rare: 60-65 minutes Internal temperature of meat: 45-47°C
Medium: 80-85 minutes Internal temperature of meat: 55-60°C
Well Done: 115-120 minutes Internal temperature of meat: 65-70°C

Remove from oven, leave to rest for at least 20 minutes in a warm place
After resting, snip the strings, lift the meat off the bone. Slice and serve on hot plates.
