2 Skate Wings, Plain Flour (to coat), 2 tbsp Olive Oil, 20-30g Butter, 1 Shallot (cut into fine strips), 150g Cherry Tomatoes, Salt, Pepper, 1 stalk of Sage (roughly chopped), 2 stalks of Parsley (chopped), 1/2 Lemon (juice)
Rinse the Skate wings under cold running water then pat dry with kitchen paper. Turn the Skate wings in sufficient flour to coat and tap off any excess, set aside. Heat the oil in a large frying pan, add the fish and cook on a medium heat for 2 minutes. Turn the wings using a large spatula. Add the butter, shallots and tomatoes and cook for a further 4-5 minutes. Season with salt and pepper. Sprinkle over the sage and deglaze with lemon juice. Remove the fish from the pan and place carefully onto preheated serving dishes. Pour the tomatoes along with the pan juices over the fish or arrange on the side, sprinkle with parsley and serve immediately. To enjoy run the knife down the bone and gently ease the upper fillet away. Take hold of the bone at the thick end, lift it and carefully unzip the fish. The bone will come away cleanly and the fillet will fall back onto the plate. Serve with steamed rice, potatoes or roasted garlic bread.

Another all time favourite, again simply poached in a wine and a herb and white wine court boullion then served with a smooth black butter and caper sauce. Plain boiled potatoes, buttery carrots with a hint of orange zest also something green like springcabbage or purple sprouting brocolli.

Always perfect. Just the right size.
Poached in white wine, capers, garlic, butter and parsley.
Served with plain boiled potatoes (in their jackets{ this adds to the flavour, Calvo Nero cabbage and small carrots, freshley podded garden peas...Voila !
Love this product. Not too big and never smelly.

gorgeous...first dusted with season flour then sauteed in unsalted butter and olive oil the placed in a roaster dish in oven . melt butter and a spot of olive oil in sautee pan, then some white wine plus 2 tbl spoons of capers... pour this over the skate and bake in med oven for about 15mins delicious...
