These traditional Scottish foods are superb for late breakfasts and brunches, but so hard to find, especially of this quality. Simply cut into rounds and fry in a little oil for a satisfying and unusual brunch - real foodies will have a field day.

Cooking Instructions:
Defrost in refrigerator overnight - Simply remove casing and slice 1½ - 2cm / ½ - ¾ inch thick

Pan Fry
Pre heat a non-stick frying pan, add a little oil and cook for 2-3 minutes oneach side until cooked through and crispy around the edges.

Chef's tip If you like your puddings really well cooked & crispy, heat for a further 1 minute in a microwave on a plate covered with kitchen paper.

Oven Method
Pre heat oven to 200ºC (180ºC fan) / 350ºF / Gas 4. Line a baking tray with aluminium foil, place slices of pudding onto foil. Cook for 15-20 minutes in the centre of the oven.

This as close as we can get to the taste and flavour of my father-in-law's puddings and he was a butcher.

Just about meets the flavour of my late father-in-law's recipe for these puddings. He was a master butcher and his seasoning for these was amazing. DR comes closest to this, so delighted with the selection.
