






| 360g Lamb Liver Strips |
| 2 tbsp Olive Oil |
| 10g Butter |
| ½ Shallot (chopped) |
| ½ Carrot (cut into thin strips) |
| ½ Celery stalk (cut into thin slices) |
| Salt and Pepper |
| 2 sprigs Parsley |


Remove the Lamb Liver Strips from the packet and pat dry with kitchen paper. In a large frying pan heat the oil and butter over a high heat , add the Liver and fry for 1 minute.
Reduce the heat to medium, add the shallot, carrot, courgette and celery and cook for a further 1-2 minutes occasionally turning the Liver.
Season with salt and pepper to taste, sprinkle with chopped parsley and arrange on preheated plates.
Serve with crisp potato rösti.
