Lamb Liver strips with Vegetables


Serves 2-3

360g Lamb Liver Strips
2 tbsp Olive Oil
10g Butter
½ Shallot (chopped)
½ Carrot (cut into thin strips)
½ Celery stalk (cut into thin slices)
Salt and Pepper
2 sprigs Parsley

Remove the Lamb Liver Strips from the packet and pat dry with kitchen paper. In a large frying pan heat the oil and butter over a high heat , add the Liver and fry for 1 minute.

Reduce the heat to medium, add the shallot, carrot, courgette and celery and cook for a further 1-2 minutes occasionally turning the Liver.

Season with salt and pepper to taste, sprinkle with chopped parsley and arrange on preheated plates.

Serve with crisp potato rösti.
