













| 1 Centre Cut Fillet Log |
| 1 tbsp Olive Oil |
| Salt and Pepper |



Preheat fan oven to 190°C/375°F/Gas 5. Brush the fillet lightly all over with olive oil.
Sear the fillet on all sides in a hot frying pan 5-6 minutes to brown all over and season with salt and pepper.
Transfer to a rack in a roasting tin, uncovered and place in the oven, cook for
12 - 14 minutes for Rare
16 - 18 minutes for Medium
20 - 22 minutes for Well done
Take the fillet out the oven and rest on a rack, covered with foil in a warm place for 10 minutes.
Remove to a carving board and carve into slices.
Serve with potato and celeriac rosti, and a wild mushroom medley.
